We all love our dogs and want the absolute best for them, including treats. Here is a quick, easy recipe you can make for your buddy that will be a big hit! I made them this morning using all organic products without the eggs and the applesauce substitute. This is just the way I happen to cook and bake, and they turned out great according to Cam, my Chocolate lab… There were no cookie cutters to be found so I just used a knife to cut out some shapes and had fun with it.
2/3 cup pumpkin puree
1/4 cup peanut butter (make sure it is xylitol free)
2 large eggs * (see substitutions below)
1 teaspoon molasses*
1/4 teaspoon cinnamon
2 1/2 – 3 cups whole wheat flour
Preheat oven to 350 degrees F
Beat first five ingredients together until well combined. This can be done by hand with a whisk or fork, or you may use a mixer. Gradually add 2 1/2 cups of flour to the moist ingredient mixture until it just comes together. This doesn’t take long. If the dough is too sticky, add additional flour in increments of 1/4 cup at a time.
Next, turn the dough onto a lightly floured board or flat surface and knead three or four times to bring the dough together completely. Roll out the dough with a rolling pin or wine bottle to approximately 1/4 inch thickness. Use cookie cutters or cut out free-form shapes and place on parchment or silpat lined baking sheet.
Bake 20-25 minutes until the edges are golden brown. Allow the cookies to cool completely before serving to your Buddy.
No molasses – no problem. It’s not necessary, omitting it in this recipe will not change the outcome of the cookies.
No eggs – no worries. Substitute 1/2 cup applesauce mixed with 1 tablespoon arrowroot powder or 1 tablespoon finely ground flaxseed
